Barcino
Barcino brings a slice of Spanish dining culture into one of Quezon City’s busiest lifestyle hubs. Known for its wine-forward menu and Mediterranean-inspired dishes, Barcino has positioned itself as a go-to spot for casual dates, barkada dinners, and relaxed after-work meals. For our UP Town Center branch visit, we focused on two of their pasta offerings: Macarrones a la Bolognesa and Macarrones a la Crema, both using penne pasta as their base and offering very different flavor profiles.

Macarrones a la Bolognesa
Visual – 3.5/5
The dish arrives looking appetizing and well-presented. The penne pasta is generously coated in a rich, red Bolognese sauce, topped with grated Parmesan and hints of Manchego cheese. The use of penne makes the dish more visually appealing as the sauce settles into the ridges of the pasta, making it look hearty and filling.
Aroma – 3/5
The smell is noticeable but not overwhelming. The beef and tomato-based sauce blend well, producing a warm and savory aroma with subtle hints of herbs. It invites you to dig in without being too strong or aggressive on the senses.
Texture – 3/5
The pasta is slightly overcooked, resulting in a softer bite than expected from an al dente preparation. Nevertheless, the sauce remains thick and cohesive, allowing the pasta and meat to combine well in each serving.
Taste – 3.5/5
Tomato notes dominate the flavor profile, which may be too forward for some diners. However, the acidity is well-managed and balanced by the Parmesan and Manchego cheeses, which contribute a subtle creaminess and depth.
Overall Impression
This dish feels like a comforting classic with a Spanish twist. While the pasta could benefit from better doneness, the flavor combination remains enjoyable and filling. It is a good option for those who appreciate bold tomato-based sauces with a cheesy finish.
Macarrones a la Crema
Visual – 3/5
The presentation is modest and resembles a home-style preparation. The cream sauce evenly coats the pasta, while the spinach and mushrooms provide visual contrast. The cheese appears slightly firm, which reduces its visual appeal.
Aroma – 3/5
The scent is light and fresh, with the cream and spinach more prominent than the chicken or mushrooms. It does not project strongly but aligns with the dish’s mild profile.
Texture – 3/5
The pasta is cooked properly and pairs well with the thick sauce. The cream and cheese give the dish a heavier mouthfeel, making it more filling with each bite. The mushrooms and chicken add variation in texture without overpowering the dish.
Taste – 3.5/5
The flavor is savory and well-blended. The cream and cheese work harmoniously with the spinach, while the mushrooms help balance out the richness. The chicken provides protein without taking over the overall taste.
Overall Impression
This dish is best described as comforting and familiar. It does not aim to be visually bold but succeeds in delivering a balanced, creamy flavor profile. It is ideal for diners who prefer mild, creamy pasta dishes over acidic tomato-based ones.
